Overnight Primal Granola/yogurt Recipe

I cannot take all the credit for this recipe. I was inspired by "Katie." Katie is the baker, photographer, and author of the popular blog Chocolate-Covered Katie. She has delicious, simple, healthier recipes. Mostly desserts. Katie uses regular sweetened yogurt and oats in her "Overnight Oats". I wanted to make more of a primal version that uses less sugar and is more nutritious. I have to say it totally worked using paleo granola and it tastes fabulous! The best part about it is that when you wake up in the morning your breakfast is ready for you to eat. You can also bring it with you to work or school. I took a lot of pictures so I could show you how awesome this recipe is. I hope you enjoy it!

INGREDIENTS:

PALEO GRANOLA
1 cup of raw almonds
1 cup of raw cashews
1 cup of raw walnuts
1 cup of unsweetened shredded coconut
1 cup of cranberries
20 pitted dates
1/3 cup of coconut oil melted
1 tbsp cinnamon
1/2 teaspoon chia seeds
3 tsp vanilla extract
1 tablespoon coconut sugar
1/8 tsp sea salt

YOGURT:
1/2 cup plain low-fat greek yogurt
2-3 NuStevia or stevia packets
1/2 cup organic full- fat or low-fat milk or 1/2 cup full-fat coconut milk

*1/2 cup of milk and yogurt is per mason jar/per serving.
*You can use low-fat organic french vanilla yogurt as well but it will add a lot of extra sugar you don't need.

STEPS:

1. Chop dates into small pieces.

2. In a large bowl mix all nuts, chopped dates, coconut, cinnamon, sea salt, coconut sugar and 2 stevia. Set aside.

3. In a small bowl mix together melted coconut oil and vanilla.

4. Add coconut oil and vanilla to nut mixture. Stir until evenly distributed.

5. Pre-heat oven to 325 degrees.

6. lay nut mixture flat on a piece of parchment paper on a cookie sheet. Bake in the oven for 25-30 minutes. Turn nut mixture over 1x while they are baking. Be careful not to burn. Cool completely. 

7. Return granola mixture back to a large bowl and add the cranberries.

8. Place 1/2 cup granola into the bottom of the mason jar.

9. Mix together 1/2 cup low-fat plain greek yogurt and 1 stevia. Place on top of granola in the jar. Sprinkle chia seeds on top of yogurt.

10. Top with your favorite fruit....strawberries, bananas, blueberries, a banana and a few enjoy life chocolate chips(Chloe's favorite combo). Any fruit you love!

11. Pour full-fat coconut milk or regular organic milk over top (approximately 1/2 cup).

12. Stir well. Put the lid on the mason jar and put in the refrigerator overnight.

13. Wake up and enjoy your breakfast immediately!

**If you are using french vanilla yogurt you don't need to add a stevia unless you like it extra sweet.
** I make 3-4 jars at a time. The primal granola/ yogurt recipe stays fresh for 2-3 days. The granola stays crunchy.
*Each jar makes 1-2 servings depending on how hungry you are. Remember on a scale of 1-10(1=starving, 10= stuffed) eat until a 6/7. Listen to your stomach, don't over eat anything or your body will store it as fat.


I had to take this picture outside on my porch where the lighting was the best. I wanted you to be able to see exactly what the granola/yogurt recipe looks like when covered with the milk.
