Paleo Melts In Your Mouth Chocolate Fudge

I can't even...I can't even..OMG, this fudge. Holy*%#, it is that decadent and delicious. If you follow my blog you know every so often I LOVE a small piece of chocolate in the afternoon. Right around 3:00 pm I start getting a little hungry and a small piece of chocolate does the trick. Let's be honest, it is small 1"x1"...just a taste. This paleo chocolate fudge recipe is gluten free, dairy free, egg free, soy free, and refined sugar free. My latest chocolate Fudge recipe is ideal for the health conscious person that wants to indulge in a treat without it being filled with processed ingredients. You will feel satisfied after eating just one square. I don't know about you but if I eat regular fudge, chocolate cake or cookies (I never do unless it is a special occasion) I immediately want more as soon as I am done with one bite, the sugar and sweetness in regular fudge is addicting! That won't happen with this fudge. Let it melt in your mouth, enjoy the incredible flavor of coffee and chocolate combined with a hint of cinnamon. I cut them into squares and keep them in a container in the freezer. Take one out when you have a taste for something fudgey!

INGREDIENTS:

1/2 cup raw, salt-free creamy almond butter
1/2 cup raw, salt-free, creamy cashew butter
1/3 cup cacao powder
1/4 cup cacao butter
1 cup full fat coconut milk
1/2 cup raw organic coconut sugar
2 teaspoons organic ground coffee
1/8 teaspoon of salt
1/8 teaspoon cinnamon
2 teaspoons vanilla extract

** I buy enough ingredients to double the recipe. If you have 4 people in your house indulging then I would double the recipe, less than 4 in your household then 1 batch will be plenty.

STEPS:

1. line a small brownie pan or loaf pan with parchment paper. Let the paper hang over the edges.
2. Melt the coconut butter in microwave.
3. Place the coconut butter in a large bowl and stir in the cacao powder.
4. In a medium sauce pan heat the coconut milk, coconut sugar, ground coffee, cinnamon and salt on medium heat until it bubbles slightly.
4.  Add the cashew butter, almond butter and vanilla extract to the coconut butter mixture then add the coconut milk mixture. Stir well.
5. Pour fudge mixture into the loaf pan or brownie pan. Cover pan with aluminum foil and place in the freezer. Let freeze 3 hours or over night. Cut into squares.
** if you like nuts with your fudge feel free to add a 1/4-1/2 cup of your favorite nut after step #4. Walnuts, chopped pecans, enjoy life chocolate chips are delightful!

You can also serve the fudge with raspberries or strawberries on the side.

My Birthday Workout and and What I Ate

My Birthday was May 7. I turned 46 years old! I feel 30. I am not kidding. I feel so fit, strong and healthy. I am lucky. I made myself paleo cupcakes. The is Adriana Harlan recipe. I love her paleo dessert recipes. They are scrumptious. There is nothing processed in the recipe. The combination of chocolate, cinnamon, and top quality coffee are delightful. They were a hit with everyone.

Cinnamon Mocha Paleo Cupcakes

¼ cup coconut milk, full fat
1 teaspoon ground coffee
1 cup (114g) blanched almond flour
¼ cup (23g) raw cacao powder
6 tablespoons (48g) coconut sugar
¼ teaspoon ground cinnamon
¼ teaspoon salt
½ teaspoon baking soda
2 tablespoons coconut oil, melted
1 egg, room temperature
½ teaspoon vanilla extract


PALEO CHOCOLATE FROSTING:
⅓ cup 60% dark chocolate, chopped or chips
½ teaspoon ground coffee
½ cup coconut cream 

How I spent my Birthday and what I ate...

I got up early and ran a slow 6 miles. I love to run, it clears my head and sets me up for the day. Mid-morning Mark, Conor, Chloe and I went to CrossFit Magnitude for open gym. We all did strength first. Chloe got a 1 rep max split jerk at 95#. She is so strong! I did 5x5 push press at 105# and Kettle bell step ups with 35# KB in each hand on a 20# box. I did 5-6 sets of 5 reps on each leg. After strength Chloe and I did the WOD "Heavy Helen." Helen is a CrossFit workout.

I used a 53# KB and did Chest to Bar pull-ups, Chloe used a 26# KB and did kipping pull-ups (no band). Chloe's time was 14:52 and my time was 14:42 RX. I NEVER imagined a 53# KB would feel comfortable over my head but it is now. After the gym, Chloe and I went shopping at my favorite store White House/Black Market. I got a new outfit. Love that store. My sister came over for dinner, Mark cooked everything and cleaned up all the dishes. We watched lip sync battles with Jimmy Fallon and cracked up laughing. I got lots of presents. It was perfect. Matey and grandpa Ken were on the Vineyard for Teagan and Cal's First Communion so they couldn't come but they called and face timed me. So thoughtful.

What I ate on my Birthday:
Breakfast:
2 eggs over easy and 1/4 c sweet potato mashed
mid-morning:
1 medium banana
Lunch:
1/2 c chicken salad with tomatoes and 1/2 slice nitrate free bacon
Mid-afternoon snack
a couple bites of seafood salad and 2 white cheddar rice cakes
Dinner:
-2 glasses of 1/2 champagne and 1/2 sangria. My new favorite cocktail.
-4-5 ounces of Baked cod with grass-fed butter on it and lemon, almond meal for bread crumbs.
- small Caesar salad
- 1 paleo cup-cake
-1 chocolate covered strawberry (almost forgot about that).
-1 cup coffee

 

Overall a Fabulous day!
